To explore these countries and their cultures, we have followed along with the festivals, cooked and eaten traditional foods, learned of traditional handicrafts with hands on exploration, along with many activities to immerse ourselves. Although we haven't taken a year to immerse ourselves in Ireland, we have occasionally hopped over to the Emerald Isle. Below are a few things we have enjoyed.


Irish Coddle, a traditional Irish stew, is a delicious hearty stew with layers of potatoes, carrots and sausages. We have enjoyed this on many occasions over the cold winter months.

Apple Tart with Potato Crust, this dish is a wholesome traditional dessert.

Traditional Irish Boxty are potato pancakes that are a great way to use up leftover mashed potatoes and make a tasty lunch.


Irish Claddagh Friendship Cards - cards inspired by the Irish symbol "claddagh" that means friendship and love. Included are printable designs for the claddagh, and printable Irish blessings.
